I love making latkes. Years ago, mom gave me her basic recipe and told me how to make them. I remember her standing at the blender blending the onion and egg together and then adding the matzo meal and potatoes, little by little. Then she would fry them in grandmas old aluminum pan. I never did inherit that pan.
Instead of blending the potatoes, I do it old-school. I grate them, sometimes by hand sometimes in the food processor with the shredding disc. I squeeze out all the water from the potatoes. I form them in a bowl and then fry them. I use a cast iron skillet.
