Tips:
1- you can tell a ripe peach by it's scent. Smell the stem end. If it smells like a peach, it's ripe.
2- by the feel - if you lightly grab it and it gives a little
3- by the color - if it's pink or a pinkish red, it's ripe. If it's a white colored flesh than it's more yellowish on the outside.
Tip for quick ripening:
Put your peaches in a paper bag for a couple of days. The methane gas gets trapped and helps to ripen the fruit.
Tip for peeling:
Cut an X in the bottom of the peach. Place in boiling water for 30 seconds to a minute. Remove and let sit until it cools until u can handle it. Peel with a paring knife.
Recipe adapted from the Pioneer Woman:
Peach Salsa (makes 1 c)
3 peaches, peeled & chopped
1 small onion, peeled & minced
1 jalapeno, remove seeds & mince
4 mini bell peppers, seeded & chopped
Juice of 1 lime or
1 tsp tajin seasoning
1 tsp Chile powder (unless using tajin)
Salt
1/4 cup cilantro, chopped
Mix everything together in a bowl. Refrigerate until ready to use.
